Congo Bars
Congo bar ni buat semlm lepas balik dr opis....terasa nak baking sesuatu sbb week end baru lepas tak baking apa2. Lepas masak, Syafiq anak no 3 masuk dapur tanya bau apa sedapnya. Dia minta jgn tutup dulu kek sbb nak hidu bau kek....mmg sedap bau kek baru masak...buat tak sabar2 nak potong tp kena tunggu sejuk nanti tak cantik dipotong.
Congo bar ni sepatutnya guna loyang lebar, agar congo bar ni nipis sikit tp guna loyang 9 x 9 jadi nampak tebal macam brownies. T.kasih byk2 buat Rima@ bisousatoi.com yg menyumbangkan resepi.

Ingredients
2 3/4 cup all purpose flour - guna tepung gandum biasa
2 1/2 tsp baking powder
1/2 teaspoon salt
2/3 cup butter, softened - guna 150gm butter
1 lb. light brown sugar - letak 300gm (boleh kurangkan lagi)
3 eggs
1 tsp vanilla
11.5 ounce package milk chocolate chips - guna 250gm chopped milk choc compound
1 cup chopped pecans (optional) - letak 3/4 cwn cashew nut
By mixer:
Sift flour, baking powder and salt in a large bowl. Set aside.
Combine butter and sugar using a mixer until blended.
Add eggs, one at a time to sugar mixture, mixing on low in between each addition.
Add vanilla and mix.
Add flour and mix until combined.
Stir in chips and then pecans.
By hand:
Sift flour, baking powder and salt into a large bowl. Set aside.
Stir brown sugar into softened (not melted) butter in another large bowl until butter disappears. You can use the back of your spoon to help incorporate the two together.
Add eggs one at a time to butter mixture and stir well after each egg.
Add vanilla, chocolate chips and nuts. Mix well.
Add dry flour mixture and stir until well combined.
Coat a 13 X 9 pan with non-stick spray and spread batter evenly into dish.
Bake at 170C for 30 minutes or until top is golden brown. Make sure you don’t over bake!
(Guna mixer dan bakar dlm loyang 9 x 9 dan alas dgn kertas minyak)
Mmg yummy congo bar ni...dgn rasa coklat cair didalamnya. Patutlah ramai dah cuba. Syafiq suka...abg2pun suka..lepas sepotong-sepotong mrk mkn...sedaplah kek ni mama kata mrk.
